5 Ways to Freshen Up Your Summer Menu

You won’t be able to resist these healthy and delicious seafood dishes

There are SO many ways to cook with fish. We love shaking things up in the kitchen and never tire of trying new recipes.

The summertime provides the perfect inspiration for new recipe ideas. Of course, it’s grilling season – which gives a whole different taste to seafood dishes – and of course there are so many fun, fresh summer ingredients to play with.

Here are five fish recipes we love – using everything from salmon to cod and steelhead trout. These recipes also feature different cooking techniques – including pan-searing, baking and grilling – as well as classic summertime ingredients like mango and pineapple. Enjoy!

1) Mango Cilantro Salsa Salmon

We love the freshness that this simple salsa (featuring cilantro, mango, red onion, chili pepper and lime) brings to the Norwegian salmon. Watch how we pan sear the salmon to best capture the natural flavors of the salmon.

2) Grilled Chili Lime Salmon

The key to this recipe is marinating the fish in the chili lime marinade, while letting the ingredients for the salsa (pineapple, mango, jalapeno, cilantro, etc.) sit, so all the flavors come together. See the full recipe at EasyandDelish.com (Denise, you’re a pro – we love this dish)!

3) Fish Tacos with cabbage and white sauce

There is something about summer that has us craving fish tacos and this recipe incorporates all the fresh summer flavors including cabbage, pico de gallo and a simple homemade white sauce. To maintain the fresh taste and texture and also the nutritional value, Lauren recommends you grill your halibut or cod until it starts to flake easily with a fork. 4) Parmesan Baked Steelhead Trout

We know that while you’re enjoying summer parties and entertaining, you still want to feel good about what you’re eating. In addition to supplying lean protein, vitamins and minerals, steelhead trout is rich in omega-3 fatty acids, which have been shown to reduce inflammation. Olive oil, garlic and parsley, also featured in this dish, boast anti-inflammatory properties, too. So while you’re enjoying the light, unique flavors in this dish, you will be treating your body to a healthy and balanced meal. See the full recipe at findingzest.com.

5) Grilled Fish Skewers with Middle Eastern Spices

These grilled fish skewers are perfect for outdooring grilling because they keep it light – a must in the summer heat. Seasoned with cumin, paprika, turmeric, garlic, cayenne and cilantro with lemon juice, the halibut skewers will soak up the flavor without falling apart on the grill.
